PassionHandyman - Thank you for your inquiry. Water is required for use of the disposal. Quick steps - turn on water, turn on disposal and then place food waste into the disposal for processing. Water helps to process the food waste and flush down the drain. It is recommended to allow water to run a few seconds after grinding of food waste is completed.
I'm wanting to get the disposal with a black flange. Should I be worried about the finish wearing over time?
The finish on the flange is very durable. We do not recommend using any chemicals or harsh cleaning agents on it.
Other than the material and price, which is better for a stainless steel sink....stainless steel or chrome plated flange? My sink is stainless steel and need help deciding which version of the included flange...stainless steel or chrome flange is best.
We would recommend matching the sink with the flange. If the sink is stainless steel, then we would recommend the stainless steel sink flange.

Can I install this under a farmhouse sink with a 10" basin depth in a regular sized cabinet?

The unit is 12.9 in. from the bottom to the attachment coupling to the sink. As farmhouse sinks require customer framing for instatallation I am only able to provide the product dimensions.
