You can comfortably and efficiently make 8 pieces of toast using standard size bread on the top rack. We don't use both racks at the same time but I am sure you could, it would just entail flipping the bread halfway through to toast both sides (more work/longer toast time.) I was skeptical about this until I saw it in person and realized all the amazing things it is capable of. We actually use it for everything an oven can do. We even make small rotisserie chickens, just be sure to use kitchen twine and secure the legs and wings because they will get caught on the heating element if you don't (every time it spins around LOL!) We have been using this for several years and absolutely love it.

I've had one for a couple/few years now on a laminate (plastic) countertop without issue, though don't think about putting anything on top of it while in use!!! It does get hot, and as You may guess, heat inherently rises LoL... My one complaint is the know selection for function is a bit confusing for some, as to which knob position controls which heating element(s) that requires reading the instructions, which are all but useless... Through trial and error, I was able to figure it out, and it has provided a lot of use, cooking many a pizza, bagel, toast, ect., and actually does pretty well baking cookies! It has been in use in an employee kitchenette, so it's easy cleaning has also been nice. I do however much rather the very basic function of My Grandmothers old tried and true Black and Decker...

I would not reccomend it to be on plastic counter top. It does work very well...5 star.
