The axle can not be removed. You probably have between the top of the wheel and the plate to put a short fastener through. Why not just get a different post style wheel instead?

I used wood screws that I had on hand and I believe they were 1 1/4 inch long The wheels I purchased were used on a crate I hope that helps
Yes, I used them on 2x4 cedar to make a rolling deck gate. There is not a lot of room but if you pre-drill the screw holes it works out ok. The gates get a lot of use and have held up well over 2+ years now.

Yes, assuming the weight will be evenly distributed among the casters. But if you need a greater weight capacity and can only achieve it by using an inordinate amount of casters, might I suggest you go to a higher duty caster with greater weight capacity?
I have two sliding deck gates using these casters - seem to be holding up well after two years exposed to the sun and elements.
