Do you break the hot wires across the switch or up and down e.g. Black on one side and red on the other?

I am not sure I understand your question, but this switch has two independent pair of terminals and they are up and down. When the switch is "ON" the left side circuit (left black screw to left brass colored screw) is closed and the right side circuit is closed (right black screw to right brass colored screw). If you have a meter you can put it on its continuity setting and check out how the switch works. You can pick these meters up for less than $10. Some stores give these meters away with a purchase if you have the coupon for it - the coupon is located next to the 20% off coupon if you know what I mean.

Do not break the neutral. This can cause voltage difference between the neutral and ground creating the risk of electrocution. Hire an electrician.

Are the two pairs of terminals electrically isolated from one another? (I presume each pair of terminals is called a pole?) I want to use one pair of terminals to control a light, and use the other to control a sensor activated fan. The fan has four wires, hot, neutral, and 2 red signal wires. Hot and neutral go directly to the fan while the 2 red signal wires go to either terminal of a single pole switch. The fan always has power, but it only turns on in response to the switch. You're not supposed to put AC power over the red wires. So as long as the two sides of this switch are isolated from one another, it seems to me this would be an ok way to use this switch.

Yes. Both sides are mechanically switched as one but the circuits are completely independent. I'm unsure about the details of your planned wiring. When in doubt consult a qualified electrician.
