A:  Guess it depends on how leakproof. Not certain you could fill it with water but no batter leaked when I baked a carrot cake in it.

We would suggest to use a thicker batter or parchment paper to prevent the batter leaking out.         A:  Yes, it is a two piece pan. When you undo the latch, the bottom comes out. I made a sticky carrot cake and it worked just fine, should work fine for fruitcake.
