From what material is the back of the unit constructed? Plywood veneer, or ...? Are the casters optional and if not are they a standard size which would allow them to be swapped out with some that are specially made not to scratch wood floors ?
The back panel on Model# 1521 is made of warp-resistant hardwood veneer. The casters are made of hard rubber, so they should not scratch the floor. However, the casters can be left off the unit if you prefer.
Back is plywood veneer. Casters are universal size.
HOW DEEP FROM FRONT TO BACK IS THIS CART WITHOUT THE DROP-LEAF OPENED UP?

I measured mine with the drop leaf down (after assembly) and it is 17.5 inches front to back.
The actual tabletop is 16 3/4 in from front to back. The drop leaf is about 1 inch thick so with the drop leaf dropped down, it’s about 17 3/4 in.
Will the store assemble the cart?

13 inches front to back inside measure back wall to front inside wall, bottom drawer
Cabinet on the left is 14 in deep, 12 in wide and 22 in high. There’s a shelf that would cut the 22 in in half but you can leave that out. You could fit 13 in wide baking pans if you stood them upright.
What are the dimensions of each of the drawers?
Above one asked about cabinet depth. They answers were 26" with leaf up and 16.5" with leaf down. If that is the case, how can the drawers be 20+" deep?

What type of material are the drawer bottoms made of?
It is made of a thin sheet of plywood. Probably about an 1/8" thick. Wouldn't want to put heavy stuff in them. We use them for bread and they work fine. At least they are not cardboard.
What is the size of the door? I wanted to put my garbage can in it.
It's about 18" wide 24" high
