can I use use this for sub floor

You would want to use 3/4" minimum for flooring. Tongue and groove with glue would work best as it would not flex. 1/2" is made for walls and is too light/flexible for subfloor.

It's a water proof?

As far as I know, it takes a long time to get wet and a long time to get dry compared to plywood. If used for sheeting and roofing, make sure you add a good underlayment on top of the sheet, preferably waterproof paper or 15 or 30 pound tar paper. Next, cover with Vinyl siding or Metal, shingles.You can use a waterproofing compound before the waterproof paper or tar and should last longer. Also, the edges are already treated with waterproofing compound but if you cut them, you will need add waterproofing to them. These bulge easily exposed.

Can this be used behind a tub and shower surround?

Not a good idea. Better to surround your shower/tub with a concrete sheet and finish with ceramic tile. These OSB boards take much longer time to dry and when exposed to chronic humidity, the act like sponge, swelling like crazy. If you use them, you will need lot of covering to keep water/humidity out and at the end, will be as costly as using concrete sheets with tiles. Hope this helps.
