I would not recommend cutting it down. I believe they have a kit for a narrower gate. Lokk on the manufacturers website.

NO. every bit of building this gate has to do with the width of of the opening and several other factors of posts and height.
Add an additional wooden board of the correct width at the top and bottom to take up the space you need. Installation of the latch depends on how the gate was originally built. You can attach it to the gate as I had to do. But I think the normal way would be to attach it to the post.
I think that either one would work OK for you. It all depends on how wide you need to go. I installed on a 48" high post no problem. A few more inches would be no problem. The most useful part of this kit is the frame, which is very adjustable with a little cutting as needed if you need to make it less wide than 36". I ended up using different hinges and latches since the ones provided are funky and cheap. But the frame works great and is essential, so worth it to me.
