For the electric smoker the maximum temperature is 250 degrees. Slow and low is the key for successful smoking. If you are using charcoal please follow the owners manual guide lines, on the recommended amount of charcoal to use. Also you can adjust the slide vents on the smoker, as well to help get the desired temperature.
