While many smokers have just enough power to dry jerky, the Smoke Vault 18 in. and 24 in. creates a wide range of usable heat that can be used for smoking ribs, fish and turkeys as well as baking pies and breads. The Camp Chef Smoke Vault 18 in. infuses that great smoked flavor to your favorite cut of meat. An 18,000 BTUs burner, fully adjustable heat-control dials and a built in temperature gauge help you reach your desired temperatures whether you are smoking ribs, fish, poultry or beef. You can also bake pies and breads in a Smoke Vault. Two adjustable racks and a jerky smoking rack allow you space to smoke to your liking. A heavy-gauge wood chip tray and a water pan will instill a Smokey flavor and keep the meat moist. Three damper valves help control internal temperatures and smokiness. I highly recommend this smoker. We are going on our 6th year with the 18”. Salmon to Boston butt, beer can chicken to mac & cheese there hasn’t been anything bad come out of this smoker (except when I fell asleep on a late night cook which was operator error). Extremely fuel efficient I have done 3 separate cooks at 6-10 hours each on one tank. The first 3 years of this smoker lived outside only covered by the Camp Chef cover. There is zero rust. I live in NC which had high humidity and It has seen a lot of rain and some snow. The cover is still holding up but is on its last leg as it’s sun bleached and starting to get rips in it. Well worth the money for the cover. One recommendation I have is don’t smoke Thanksgiving turkeys, hams, or bbq unless you plan on doing it at every family function from now on because it produces amazing food which I don’t mind one bit. It is also pretty portable to load in the truck and take on vacations or to a friends house for a cookout.

    So, I am a long time “griller” that knows my way around the grill but was a novice at smoking. Like many here, I shave become smitten with all the ‘pit master’ shows of recent years and finally decided to buy a smoker. All told, I wanted something simple like a pellet smoker. However I did t have $500 to plunk down on the model I wanted so it was this or am electric one. I decided against electric because my brother has one and he hasn’t had too many good things to say about it. Here in the Windy City, he says the heating element in those is not suffice to for late fall or very early spring as they aren’t powerful enough. I decided on Camp after researching several sites including YouTube for owner testimonials and cooking sites for opinions about the manufacturers. It seemed that Trager were the two most notable companies and Camp Chef was almost always a bit less pricey so off to the races(or backyard). Setup: This unit comes pretty well put together and in actuality, you more or less are bolting the cooking element to the main snow box and attaching the door and thermometer(more on that later) all told, it took about 30-40 mins from the box to being ready to cook. I then filled the water pan, wood pan and let her go for about an hour and a half to cook off any remnants from the factory as well as to ‘season’ my smoker. Cooking: For my maiden voyage I decided to do simple meats I could grill with my eyes closed. Wings, hot links and spare ribs. This unit is large enough to cook them at all - with room to spare. I learned to fill the water pan with a mixture of beer and apple cider vinegar instead of water( a tip from YouTube) for additional flavor. I also used a combination of cherry and applewood chunks for color and mild flavor. I let the links and wings go for about 2.5 hours between 250 and 275 degrees. The ribs I kept on for 5 hours, 3 open and final two hours wrapped. All of the meat came out great. The wings were a little rubbery, admittedly but they were certainly not bad. Now, as for the cook itself, the unit did a pretty decent job holding temp, but there were a few times where it swung a bit hotter or colder than my optimal range of 260-280 and you spend a good amount of time readjusting. Also, the knob to adjust the propane higher or lower is extremely sensitive. A very slight, incremental turn left or right might cause the temp to fluctuate more than 20-25 degrees so you have to be mindful of the air inlets as well. Finally and this is most important - please invest in an aftermarket thermometer l. My buddy was gracious enough to gift me one which has a probe for the meat as well. This is essential because the thermostat on the door is decidedly inaccurate. The meat, however, was great. Checkout the moisture and smoke ring in the photo! Last tip is to consider using wood chunks instead of wood chips as they have depicted in advertisements. The chunks burn slower and give off more smoke which means you will be opening your grill far less than with chips. Less wood refills = more consistent cooking temps and more smoke flavor In your meat. All in all, I am very pleased and look forward to smoking meat for many more years. If you are in the market for a propane smoker and don’t have legit smoking bona fides, I feel this is a great little smoker to start out on.

    I had to order this smoker twice. First one delivered damaged by UPS. Clearly dropped on a corner which damaged the frame and door didn't open properly. HUGE cudos to Home Depot. One phone call to customer service and it was handled. I decided to return the damaged smoker to local store. HD shipped a new one which arrived in great shape. Smoker was easy to construct with very good instructions. I have "Seasoned" the unit but not cooked food yet. The smoker started perfectly and I used mesquite to smoke. This smoker is great looking and works like a charm. I recommend the smoker AND 5 Stars for Home Depot!

    I'm new to smoking and this is my first smoker. The materials used on this smoker is durable. The door is brushed stainless steel with a spot welded bar to keep it from warping due to intense heat. The door latch secures tightly against the frame and stays cool due to rubberized cover. The thermometer built into the door is rated up to 500 degrees. The smoker chassis is heavy gauge steel with powder coat, and heat resistant black paint inside and out. It comes with a heavy gauge removable drip pan allowing for easy cleaning. It also comes with 2 heavy gauge chrome grates including 1 for jerky. The shelves that hold the grates in place are made of the same heavy gauge chrome steel. There are three vents that allow to regulate heat and exhaust. The single large burner is made of aluminum alloy. It is powerful enough to sustain 250 degrees in medium setting. It comes with a match-free instant start feature. The propane hose is long enough keeping the propane tank at a safe distance. The temperature dial is large and easy to read. The whole chassis is elevated from the ground by four solid legs. This allows for proper airflow and keeps the burner from touching the ground. Although close to being a perfect smoker, it has a few flaws. 1. Even though the door is held firmly in place by the locking lever, smoke sneaks out of all the door seams. Perhaps, applying a bead of heat resistant silicone will keep the smoke in. 2. The door gets hot to the touch. A thermal shield might help prevent accidental contacts and burned skin. 3. Dual doors would be great allowing access to the water pan, and wood tray without letting the heat out. This also prevents dangerous steam that could burn your face from getting out and causing harm. 4. The door thermometer is 10 degress off compared to a digital version with dual probe. 5. The temperature dial has a rotational gap that allows for inaccurate gas flow. Listening for the variance on "burner's hiss" is a more accurate regulator. Overall functional value of the smoker is worth the investment. The 18 inch model will serve a family of six rather easily. The 24 inch version can smoke full size slabs of ribs. But why spend for a larger unit if the 18 inch will do just fine. Just slice your ribs in half or get smaller cuts of meat. There is plenty of room for 2 chickens in one grate and can easily smoke 8 half slabs of baby back ribs. I'm very happy with my purchase from Home Depot which handled my transaction online flawlessly. My smoker arrived earlier than expected.

      Love it!
      I have been looking at different smokers for about a year, and since I am a beginner I decided to go with propane fired for ease of use. This smoker has recieved high ratings from numerous sites I visited, and when I caught it on sale at HD it was a done deal. I had the day off when this baby arrived and I was giddy like a little boy as I tore open the box and began the setup. The setup was fairly easy and took approximately 30-45 minutes. After seasoning my smoker I couldn't wait to use it the first time. I have only owned this thing for 30 days and have put it to good use, we have done lake trout, jerky, whole chickens, pork butt, and ribs. One of two negatives I have so far is when I did the ribs, the cabinet is not quite wide enough to fit a whole rack of baby backs so I had to cut them in half, which is not a huge deal since we won't be doing ribs all that often. I could not believe how easy it was to control the temperature on this thing, once the smoker and water pan are up to temp it holds steady and you may have to slightly adjust a vent every now and again. The second negative is with the temp gauge in the door, mine is off by about 25 degrees, again not a big deal because I have never been a fan of door gauges and made the investment in a dual probe digital thermometer so I can monitor smoker temp and meat temp simultaneously. I would highly recommend this smoker to anyone who is looking for a quality product that produces consistent results. Don't pass this one up, especially if you happen to catch it on sale!

            Needs a better burner and/or control
            I had this for a number of years now. Maybe smoke a couple times a year. I have other Camp Chef products that I like, so I went with this because I thought being propane it would be set and forget. However, like my other Camp Chef products none of them have precise burner controls. It's not so bad when cooking a meal, but trying to smoke something low and slow over hours in this smoker requires constant attention to keep it at the correct temp. I even added a second valve in the line to try to control the heat. as the built-in one doesn't go low enough. Personally I think the burner is too big for the smoker. Try to keep the flame low enough to keep the temp low and it goes out.

Over the years, many wonderful meals have come from this guy. I don't think we ever smoked any meat that lasted more than one day. The tri-tips, ribs, and LOTS of fish have all turned out great. So simple to use. Great flavor. I know many people who do the Traegar way, but that is too much effort for me. This is priced well, and is real easy to use. Spare parts are available if needed also.
