What is the largest turkey you could smoke

I don't know what is the largest turkey that you could smoke, but I can tell you that I have smoked a 24 pound bird and it was the best turkey ever! We soaked the turkey in a brine for 2 days; then stuffed the bird with oranges, apples, pineapple, onions, and garlic. There was still plenty of room, but I don't know what is the biggest bird that you could fit in the 24 inch smoker. Good luck!

I’m into my 4th year with this smoker. Ease of cleaning depends on what you’re cooking and how you prepare the smoker. Cooking multiple pork shoulders for ten hours or a few racks of pork ribs for four or five hours will render lots of fat. Lining the removable tray with foil at the very bottom below the wood burning tray will help. Lining the water pan with foil, as others have suggested is good, too. In addition, I cover the top of the water pan with foil, too, and cut some holes in the foil. This will cut down on the amount of water you need to add as you go through hours of cooking and keeps some the fat on the foil instead of in the water. The cooking grates do get funky and require hot water, dish soap and elbow grease.

How do you maintain a precise temperature? Where can i get an accurate front temperature gauge to replace factory one?

I didn't trust the thermometer in the front door. The more accurate way to determine what cooking temperature was being developed and maintained was to go with a probe thermometer inserted into the food. There are several on the market, but my first choice, from past experience, was from ThermoWorks. The door thermometer doesn't seem to provide any accurate detail, and changing it out still doesn't tell you what the food is doing anyway.
