The brackets hang on this track and the track supports all the load. I believe it is less important to find studs when you "anchor " the vertical brackets. Those anchors are more for positioning BUT you don't have to use it if you are all in the studs. It may be more for when the studs are not where you want them to be
Yes it can be cut down. I would paint the cut-off side with something like Rost-oleum to protect it from oxidizing. Make sure the holes align with the studs before cutting it.

Yes, that is what I did and it worked out great.
So far for me, it's been enough to install it with screws alone.
The holes are normally spaced to the standard 16" of separation that the wall studs have. But you can make additional holes if you need them.
What kind of metal beams are you talking about?
In my experience it should hold it. I have a similar system installed for clothes, shoes, and shelfs and I tested it by putting all my weight on it (over 250 lbs.), and it held my weight fine. I think it should hold your 75 lbs worth of shoes just fine too.
It all depends on how you install it. If you are installing it with the recommended hardware and follow the instructions to the letter, it should hold a couple of hundred pounds easy. I know this because when I installed mine I put all my weight on it (over 250 lbs.) and it held strong.
