Could these be safely mounted using only 3 of the 4 screws?

It ultimately will depend on how much weight you are planning on sitting on top of the casters. You can use like 1/4" lag screws which will do just fine, but if you are planning on loading quite a bit of weight on top of these I would go with nuts and bolts.

Will casters rated at 110lb each work with a kitchen island weighing 300lb?

Yes they would work just fine. You would not be anywhere near the maximum weight rating of the casters.

What are the dimensions of the plate?

2-5/16" x 2-3/4" - the 2-3/4" inch sides has a slight curve inward that recedes to 2-1/2" at the center of the side. the corners have a 1/4" radius edge. 1/16" in. thick plate. the screw holes are 5/16" diameter. Too big for regular drywall screws to hold to anything without at least a washer. (and no bolts included with the units that i bought in port huron, mi)

very very light duty
These are very light duty casters. I have about a dozen of these and most all of them have been overloaded and are bent without much weight. My guess is that they would be okay with less than 25# per caster. More weight than that bends them, so they are unable to swivel. Buy some better casters.

They were fine........at first
These casters are ok. I used these casters to create a cart for my wet/dry vacuum and cyclone dust collector so that I could move it around my garage with ease. At first the caster worked great. The rubber material makes them great for just about any surface and they ride over cracks fairly easily. I gave them three stars because after a few months of use a couple of the casters on my cart just do not like to swivel anymore when I am trying to pull the cart around the garage. What good is a swivel caster that wont swivel when rolling it? The caster seems to be well built but the bearings that allow them to swivel need to work.

Used these to replace worn casters on the shop creepers and they work great.

I purchased 4 of these wheel, intalled them, and they would not caster. The reason, the ball bearings they ride on were all DRY. After applying an ample amount of grease, they worked buut not as well as I expected. If you choose these wheels, buy some grease also.

works great on bottom of cart
I bought these 3-inch grey, non-marking, rubber casters to put on the bottom of a 2 ft x 2 ft cart that I was building. I put 2 swivels on one end, and 2 rigids on the opposite end (which is how shopping carts are made). The weight rating for these way exceeds what I put in the cart, but I decided to put them on any way because I tried to put smaller plastic ones on, and they didn't work properly (kept getting stuck sideways). The rubber on these also, is super quiet compared to plastic or polypropelene wheels. I made sure that when I installed the wheels, that they were level with one another. The cart rolls great!
