These should all be the same species. White birch/EU birch. Scientific name is betula and they are the same.

The most we can go is 10'. It is simple to adjoin a couple pieces together. We have a hardwoodreflections youtube channel and have done this same thing.

I used a jig saw to cut the hole for the sink. We washed a lot of dishes and water damaged the countertop. I replaced the butcher block about a year after I installed it with a manufactured laminate. We loved the butchers block everywhere else, but around the sink you would be asking for trouble. Also, you will want to use tongue oil to color and seal the butchers block.
The top is extremely heavy. I estimate about 100 pounds. I’m not sure if it would be too heavy for your needs. It is beautiful but probably too heavy.
Yes both sides. It draws moisture very fast, or faster than most woods. Leaving the under side bare will allow it to be unprotected and draw alot of moisture. No more that what it takes to cover both sides, I would do (I did) both top and bottom, just to be safe. And if you get some damage to the top, you could always turn it over and still have the same cover or shade as the top. It is worth the extra effort for longer lasting top.
Yes it can. Use a corded saw with a sharp blade. Use some sort of guide to make sure your cut is straight. Take your time and let the saw do the work.
Standard is 25" wide and island is 39". No difference in wood.
