It looks like it ought to work. I pulled up the details for both the "Johnson Hardware 1555 Converging Pocket Door kit" and the "751 CONVERGING KIT" for the "A&F Wood Series 1750 Pocket doors". The H channels, that go in the center where the two kits butt together, look to be identical, it's the "Stops" that are a bit different from each other. The track system for both also look to be identical, which would indicate that you should be able to interchange the parts one from the other.

What size of header do you need for a single 30in. pocket door and what is the rough opening for a double 30in. pocket door.

For a single pocket door, the rough opening width is two times the door width plus 1”. So it would be 61” wide for a single 30” door. For a converging/double pocket door meeting in the middle, the rough opening is 4 times one of the door slabs. You don’t add anything to the width. So for two 30” doors meeting in the middle, the rough opening width would be 120”. These rough opening widths assume you are using them with a Johnson Hardware Knock Down Pocket Door Frame.
