in hanging one of the doors, the while sliding the pivot into the pivot lock, and in an attempt to keep the pivot lock from sliding a lot further from the jam, my assistant inadvertantly looked the povit lock in place about 10in from where it should be. Now we can't move it, it won't unlock. The unlock slide "slides" with great effort, but it's not really unlocked.

Unscrew the pivot lock screw just a bit, then slide the entire lock to where you want it. Tighten the screw.
How much shorter would the door slabs need to be from the framed opening?
The finished opening should be 2" taller than the doors. So if the finished opening is 82", the doors should be 80" tall.

Will these parts work on metal bifold doors from the 80’s
Likely, those doors utilize both a bottom track and a top track. The 1700 Series will not work with doors that need that type of system.
Looking at the installation instructions, the pivot is set 2" from the door edge? If so, that encroaches on the opening space. Anyway to bring that in about one inch? Standard bi-fold hardware is adjustable for that.
That is set at 2" to ensure it moves smoother. It matches the distance of the bottom pivot. If you move it in closer, it will likely bind up and not function correctly.
No, it is not recommended to move the pivot.
