Greg, the wood chips can be mixed in with the charcoal or places in the ash bucket.
Is there a way to only use wood in the hopper?
Thank you for your question. Yes you can but its not recommended to use just wood. We recommend chunks or mixed wood chunks with your charcoal.
What size are the cooking grates? Can it fit a typical brisket?
The dimensions are WIDTH 16.38 DEPTH/LENGTH 11.88 HEIGHT 0.38. Yes this unit can hold a brisket.
