It’s actually very easy to transition the hand truck. The two major parts, the silver load bearing frame and the red wheeled chassis are latched in place by a locking lever that is located about mid-way between the wheels and handle. Simply pressing the lever unlocks the latch and allows the frame to be slid away and down from the handle to transition to the cart configuration. Very easy to switch out between the various modes while also be a very strong and sturdy piece of equipment. Well, I suppose it might depend upon just what kind of mustard you're planning on cutting. This unit is great within its price range. It is light, easy to configure, easy to store, and handy for moving boxes, like large orders from say Sam's Club, unassembled houseware units from Home Depot, or boxes of books, or cases of water bottles etc., around the home on a hard smooth surface. Bear in mind that, if you're using it in the horizontal position, the small coaster wheels do not like being the lead wheels over door thresholds, so if you have to do that, plan on the load being light enough for you to give them a bit of a helping lift to get them started. Slamming them into the threshold to use mass and momentum to carry you over is probably not a good idea. The larger rear wheels will pose no real problem though, and you can pull the smaller wheels following much easier that using them as the lead. If you're looking to move refrigerators, a dozen Sakrete bags, or any other bulky object of several hundred pounds, especially over soft ground or up or down stairs somewhere, then I'd agree that you'd be wise to look into a more 'commercial' hand truck and pay the extra money.
