Yes, it can go on any flat, solid surface.

If I bought enough of only these planks and none of the 1?x1? tiles, would I be able to lay these out in a herringbone pattern?
Yes but it would be best to use the actual deck tiles and the single slat deck tiles for fill in pieces.
How many do I did for 120 square feet? Also could this be actually used as deck tile?
This isn't meant for an entire deck, only to fill in gaps, the 1x1 would be better suited and those come 10 sq ft per box.
How many boxes do I need to come 100 sq ft
You would need 100, the deck tiles would be more suitable for that size deck.
Is there anything you have to buy additionally to secure this to the ground?
No
How do I need to cover 168 square feet?
At 2 sq ft per box you would need 84 boxes.
