I would recommend the 1/4" x 3/8" notch, bit if your floor is flat the 1/4"x 1/4" should work.

Yes you can! You actually want to use 1/2 in trowels it on any tile that is big and has weight to it. Ex. 12” x 24” 6x6” does not mean you can’t use a smaller trowel but this one will help just in case the floor lifts and has problems you have more of a gap between the floor and the tile!

question about notch size

Is the notch size suitable for 2" mosaic hex tiles and also for subway tile or is this designed for bigger tiles?

Yes it is small enough to work on small tiles when you get into a corner or a tight space you might need to apply the motar to the tile vs the wal or floor.
