It will work, however depending on your climate it does not really provide a decent r value in large spaces, in a car wind shield for hot spaces is good.
Yes it can work just fine as a solution for your needs. I would say the bigger issue is why insulation is needed. A microwave should not emit that much heat to raise the temperature of an adjacent cabinet more than a negligible amount; the wood of the cabinet should be a sufficient insulator on it's own. If you have access to a thermal camera, use it to inspect the walls of that cabinet. I suspect the warmer air may be coming from the back (if it's against a poorly insulated exterior wall), or the top (poorly insulated attic).
