Arrived razor sharp and ready for work. The 16-degree edge works fine for slicing and chopping veggies and meats—excellent for stir fry prep and cutting apart ribs for BBQ. It’s not a thick cleaver for chopping through bones but thinner and lighter. It’s somewhat like a nakiri, but heavier with a pointed front tip and a longer cutting edge that is straight instead of slightly curved.
Kanso is a practical alternative to delicate high maintenance knives. The blade is solid steel from tip to handle butt. Features a rustic industrial appearance with unpolished wood handle pieces attached to a full tang blade with visible bolts—a style quite different from Shun’s usual polished elegance. The blade alloy is AUS10A, a combination of good edge retention, ease of sharpening, and toughness to resist chipping. To reduce the visibility of scratches, the blade has an unpolished patina described as a “Heritage” finish. A projecting hanger loop at the handle butt completes the rugged image. The handle is heavy dense wood, shaped for a comfortable pinch grip on the blade.
The single alloy blade should last for many years of repeated sharpening. Hand wash and dry promptly after use. Lifetime limited warranty and sharpening service for original registered owner. Made in Seti, Japan.

Shun Kanso 7 in. Asian Utility Knife has the look of a small clever in appearance, but is not for that purpose. Its multi-purposed, used in the kitchen to portion meat as well as slices and dices vegetables, things not normally done with a clever. Its not a clever, but does has the wider blade associated with it and also its thin like a chef's knife. It does have a very sharp blade with a point on the end which is different from a clever. The overall design of this kitchen knife is industrial like in look with an aged clean finish.
You hold the Shun utility knife the same way as other utility knifes with its longer handle, doesn't have a curve in the blade so it doesn't rock like a chef's knife. It does feel firm and easy to control the way you use it portioning meat. The pointed tip makes for slicing vegetables, but for me, not replacing the most delicate cuts for speed of a paring knife. I noticed being more over top of the cutting area when working with it. This knife is new to me and its definitely found a place in my kitchen for meats and for larger vegetables like cabbage.

My first thing to use it on was an onion. It sliced through it with ease. The point on the tip of the knife served as an excellent score. The knife was so sharp that none of the onion pulled up from the razor thin slices. I then got out a very ripe on the vine tomato. It sliced through it too with ease. No tugs. No tears. Nothing. Just sharp & clean slices! In fact, I got very self conscious with the cutting since it was so sharp. This knife can take off a finger!
This knife is not made for cutting bones (chicken or pork ribs) or thick skinned vegetables (butternut squash). But it can cut everything else. The edge is about 2.5 inches or so. Perfect for thin slicing of other meats and vegetables.
The knife is intended, per the directions, for locomotive like cutting action. It is not make for rough chops for street tacos or pulled pork. It is a precision knife. Not a chopper/cleaver.
It also says to only use the knife on cutting surfaces like wood or polypropylene boards. Do not use it on marble, granite or acrylic cutting boards. It will dull the knife quickly.
It is also very important to never ever never put this in the dishwasher. You must carefully hand wash it. Anything else will degrade the blade. They also encourage a sheath for the knife since it is super sharp. After using it, I can understand why!

Beautifully crafted knife. I especially like the packaging when I received it, all precautions so as not to cut yourself when opening. The insert has instructions on how to use it properly so as ot to chip the surface of the blade. The cutting surface suggested is wood. Not dishwasher safe, it also comes with instructions on how to safely wash and dry it. The knife has a good weight, not to heavy and the blade is super sharp.

This Asian utility knife is a great build and is very sharp. Cutlery of this quality is of its highest standards. I like using this utility knife better than your basic chopper knife. I only downside is that is cant go in the dishwasher.
