Double check the description before ordering. Look for HDG or Hot Dipped Galvanized. When I bought the CBSQ66-SDS2 from Home Depot they said so in the description and were Hot Dipped Galvanized.

What's the best way to make sure the base is level when installing and won't move in the wet concrete?

You can attach any scrap of wood to the base and connect it to the form or something else to make it level. If you go vertical, such as preinstalling the post, you would be wise to use a 2x4 for diagonal bracing like you would for raising a wall.

I'm a bit confused by the 'support from the top' statements I see. I want to build a pavilion - four columns, with a roof structure on top - are these the right bases for that type of application? Like that shown in the pic. Plan is to dig and pour four concrete footings, then raise four columns from there, and to add a wooden deck around the columns.

Yes these will work for 6" X 6" posts (5.5" X 5.5"). If you end up not capping them, a decorator type post base may be your best bet.
