10-3 NM-B cable would be fine for your application as long as a few conditions are met. 1.) The cable must be installed in a dry indoor location only. 2.) The cable from the inlet must be feeding either a transfer switch or panelboard with an interlock cover.
You probably need the 10 wire, if the breaker is 30 amps then the 10 wire is fine. Most condensing units need two hots and a ground, no neutral. If yours doesn't need a neutral you can use 10/2 instead of 10/3. If you use 10/2 the white and black shielded wires would be the two hots and the bare copper the ground, obviously. Check every connection throughout your circuit before connecting the breaker.
This was the correct wire for our dryer.
I’m not an electrician, just a handyman, but I would consider using outdoor wire instead and 10/3 would be overkill for the project you’re describing...12 gauge should get the job done...
It sounds as if you are wanting to plug the motor in so that calls for a flexible cord such as SOW. I'd use 12-4 SOW cable.
