How wide is the cutting board area? ie, how thick a cutting board can I put in there?
It actually comes with (3) different color cutting boards to keep veggies, raw meats, etc separated. Cutting boards are about 10" W x 14" D. The space that holds these thin cutting boards is only about a 1/4" wide. Traditional sized cutting boards will not fit in this opening.
What size are the utensil holders?
The canister is 5 1/4" deep.
Are these unfinished wood so I can stain to match
No, they have a clear coat finish and can't be stained.
It appears that my opening is only 23” tall. Can this organizer be adjusted to fit?
No, this organizer requires a full 25.5 inch height.

I have 2 questions can it be installed in a bigger cabinet in the middle of the door? Can the knife block be taken out?
Insert requires a full cabinet (one with no drawer on top), and there are rails on the cabinet floor for the insert to slide out on. Your existing cabinet door front attaches to the insert. No clear on what your application is... The black insert square can be removed to clean. If you want an insert without the knife block, that is a different model.
so there is no way to make this work in a 12 inch cabinet?
No, the product needs at least 11.5" or greater opening to work.
No, this will not work with a 12" cabinet.
Would this work in an 18" cabinet?
Well, Yes it will obviously fit as it is only 11" wide and you are putting in a 15" opening I have to assume with a 18" wide cabinet. However, for this product to work effectively it really needs to be in a 15" cabinet with a 12" opening. This is better desinged for that application due to the rub bushings that keep it aligned inside the cabinet and the door mounting capability.

How wide is the hardware the connect to the inside of the cabinet? If the rollers and metal brackets are a total of 1/2 inch I want to install this between two cabinets and attach my 12" door panel. I can install a 1/4 inch frame as a block.
This is not a filler. This is a in-cabient organizer. You install this directly into a existing cabinet. You will need a full-height Base 15" cabient with a 12" opening.
