Hi, I would definitely go with 1/2" or 3/4", depending on how much weight you will be holding with these shelves. As for the wood, that really is up to you and what would look/work best for your closet. They will all be very similar, just different faces due to the type of species you go with! response to question 1, didn't notice any gaps, gouges, or knots. used as cabinet door panels. don't know about question 2, but returns have been very easy.
