They're actually steel discs. They just call them "tin" for convenience. Maybe back in the day, they were actually made of tin.

If I want the 1 5/8 size, how to I order it?

You say you have the 1 5/8" or 2" size, but don't give an ordering choice. You only have the 2" size in my local Home Depots in Austin TX.
