A: s The entire door is one piece of glass with the grids placed over it. I gues it might be possible to cut one out, but, boy, what a project. Not something I would do.

A: Yes. You can trim 2 1/2” off. I suggest taking maybe 1“ from top and 1 1/2” from the bottom to keep the look/ratio balanced.

Yes, they are tempered
As far as clear pine, I do believe the door is pine, but the door was unfinished when I received mine.
You would add the coat of clear finish yourself.
The windows have a plastic film over them so you don't have to tape the windows, but after coating, use a razor blade to cut between wood and film.
This coating makes painting / clear finishing very easy.
