You say that the water dispenser water temperature should be the same temperature as the fresh food section. In my recently purchased refrigerator the fresh food section is about 40° but the water from the dispenser is 70°. Do I need to call for service?

Yes you do. One is needed as it supplies water to the ice maker in the freezer and to the water dispenser in the refrigerator compartment.
Will the installer remove the refrigerator doors so it can clear the opening doorway into the kitchen? Depth of the fridge is "listed as" 35.87 inches. My kitchen entry opening is 34 inches. There is no where describing what entails the "Depth".
