A: The water pan is used to keep the smoking environment moist so your meat does not become tough and dry out. You can also use juice, soda & beer which adds to the sweetness and flavor of what you are smoking.
A: Thank you for your question! The water pan will hold water or juice or liquid of your choice and will evaporate into the air inside the smoker while you're cooking. This can help to flavor the foods or just keep them moist so they don't dry out. In some models, the drippings will also run into the water pan and this will also help add a terrific flavor to the foods by allowing some of the moisture from the foods to go back into the air inside the smoker as well. It is definitely a must-have when smoking!
A: It keeps moisture inside, and keeps your food from drying out. Also it catches dripings and they won't burn on the pan.
A: The water helps regulate temp by adding humidity to the smoke and keeps meat moist. It does not have to be water, you can add any combination of apple juice, beer, vinegar and fruit to achieve desired taste.

A: Yes, I think it puts a better flavor to the meat. But if you are in a hurry you can put dry chips in and they will burn faster without the smoky flavor that makes the meat taste better

A: Thank you for your question. The answer really depends on your preferences and your smoker. Sometimes, you won't get quite enough smoke with soaked chips, especially at lower temps, so if you're setting the unit to temps at 230 degrees and lower, you'll want to use dry chips. With higher temps, above 230, the soaked chips may be more beneficial to you so you won't have to add them as often because they'll smolder and smoke well, but won't burn up as fast as the dry chips would. A: Personally, no. It may make them last longer but the chips are small and essentially you just limit the smoke ability. Let them go as is and just keep filling the tray.
A: This unit can handle two average sized turkeys at the same time. It is difficult to give you a definitive weight to go by because a turkey may weigh 18 pounds but depending on the "size" of it, you may or may not have to remove the rack above the turkey. It just depends on the area the bird takes up. Our best answer is to know your smoker's interior available area and then purchase your turkey(s) based upon the area they'll take up inside the unit.
