A: In a gas fired grill, they have to set pretty much on the fire to get them to smoke. These large chunks are meant for charcoal grilling or smoking. Before i had my smoker, i used the smaller different brand chips and would drop them on the coals and try to shut most of the air off to keep them from sparking into a blaze. Kept a water spray bottle handy to cover it when needed.
A: You can't unless you reduce them to chips. Better to buy the chips and put them in an aluminum foil poach. and place that on the grill. The poach should have holes poked in it. Best to apply flames for a few minutes before putting the meat on, to allow the poach to start to give off smoke.

It would probably be better if you pre soaked your wood chips or chunks prior to using them. The reason being you will have constant even heat so it wont take long for your wood chips to ignite. You may also want to use chunks not chips, If you cant get a smoker box you can actually use a old meat loaf or casserole pan.Cover with tin foil with holes punched out in the foil.
