A: NOT to START...but to add. Soak your chips about 30 min. prior to use. Just before you put your pizza in to cook, pile your wood chips along side your pizza area and get the chips smoking (fan with magazine if needed). If you were to add the chips to the wood fire directly....they would just go up in flames pronto.You want smoke not fire when adding the apple or any other flavor to be imparted. I think you will love smoking with flavors...try them all!
