Although there are ways to sear on the Ironwood 885, and even cook at high temperatures, low and slow is the typical approach taken when using a smoker. It is in this range that the most flavor will be added, not just because of the length of time that the food is exposed to smoke, but also because lower temperatures create more smoke than higher ones, especially when Super Smoke is activated, which is a feature exclusive to only certain Traeger models. Another feature that you will only find on a limited number of grills, including the Ironwood 885, is the Dual Position Smoke/Sear Bottom Grate, which allows you adjust the grate positions for getting the best results, whether for searing or smoking. And with a high temperature setting of 500 degrees, not only is searing possible, fast and hot cooking should certainly be achievable too.
